Got some mud in my motor oil. Does anybody have any tricks to clean out all the bad oil and start over with fresh oil without wasting more oil by flushing it 5 times?

I just realized this was the OHV forum, I was thinking how the fuck did you do that to your truck?
Anyway, some oil to flush it with us a small price to pay.

I've been told by a couple of people to run diesel to cleanse the motor of bad oil, has anyone ever done this?

Yes, Diesel or Kerosene will do the trick. Drain old oil, fill with diesel, crank and let run for about 10 seconds, drain, repeat. Do not do it more that 2 times in a row, as you could cause internal engine damage. Or just use the cheapest oil you can find. Wal-Mart usually has plenty in stock. You also need a couple of oil filters. Even after all this, you are probably going to have to rebuild the engine, because most crankcases have little crevices that love to hold mud that will just randomly come out and get mixed in with your good oil.

keep your drain plug out and let it completely drain for a few days, then run at least half or one quart of oil and fill the rest with deisel, motor flush, or kerosene, run for a few seconds, drain, then fill with good oil

Anybody have an idea how to get an oil filter off that won't budge? I already tried by hand and with a belt, sad to say I don't have a filter wrench either.

IMMEDIATELY, purge the crankcase with diesel. do not wait and simply drain as you are inviting corrosion. Run cheap oil after the diesel to make sure the oil comes out pure, then run your good oil.
