Trying to decide to go with 20" stock wheels or 18" stock wheels?

    20" with 275/65/20
    Or

    275/70/18 on 18" wheels

    Pros and cons?

    20s, because they look better

Choose your preference, it will make absolutely no difference. Tires for an 18 inch wheel might be slightly cheaper but the difference is probably negligible. 20s won't ride dramatically different, you probably won't be able to tell the difference.

20s so many more tire choices, vs 18s are tough and not a lot of options.

All personal preference. I personally like more meat on my tires. Unless you go with a 37" tire, I wouldn't do a "20 wheel. Again, it's all personal preference and ultimately it's up to what you think will look the best.

5 on the back 3 (over factory), 5 and 15 on the front 2, and 35 on the shield with 5 strip at top and bottom

What's your setup as far as suspension on your truck now? You would need at least a 2.5" level to fit 275/65/20's, those are a 34" diameter tire.
Even then they might be a little tight on clearance.
