My dad and I have ran 285/75R16s on 16x8 wheels on 3 different 2500HD trucks ('02, '04, & '06). You will have to trim the lower air dam on the front some and pull/tie the inner fender back a little, especially on the drivers side. My dads Toyo A/Ts in 285s still rub on his '06 some. They rub the worse out of all 3 of the different HDs we've ran them on. But the Toyo's are also noticeably bigger than the other 285s that we ran. The 285 MTRs that I'm running dont rub unless I hit a big hole/bump when at full lock and then they barely scrape. You can run 285s though. Running them on factory wheels will help eliminate rubbing issues as well. It will keep the tires inside the fenders more too.

Thanks guys i went and bought them last night and I put them on the rim and there on the truck now they look awsome no rubbing even at full lock alot better than the old 245 75 16
