I have an 05 gmc ecsb with 3.23 gears. I was wandering if i would see a big difference swapping to 3.73 since i have a set laying around that i could swap? Would gas milege pick up since i do a lot of city driving?

Yes and yes, I went from 3.23 to 3.73 on my old truck and it made quite a bit of difference.

If it's free, do it. If you're buying them, go 4.10's (depending on your tire size)

I went from 3.23's to 3.73's on a 28" tire and it helped a little bit performance wise, but wasn't dramatic. I could honestly use a 4.10 or 4.30. My city mileage dropped a little, but its probably due to driving habits more than the gear. Drive with a light foot and you'll be fine withthe 3.73.

i'm have chevy avy 05 z71 5.3
but idont know what is the gears i have (if you can tell me how i can know)?
and i want to know how much the differences between these gears (3.23 , 3.73 , 4.10 , 4.30) about performance and mpg ?

According to what I've read here your mileage should improve with 3.73 gears driving in the city as they give you mechanical advantage.

I've got 3.73's with a 29" tire on my DD, and I don't really care for them.

In a perfect world, it'd have 4.10 gears minimum.
