I just changed all of my brake pads, rotors & the e-brake shoes about a month ago and my rear brakes recently started squeling. Any ideas? Could the e-brake shoes need to be adjusted?

Gonna have to take everything apart and inspect everything. Make sure nothing is stuck and if you want to keep the pads then use some sandpapaer on the friction side to roughen it up some. Also put some brake lube on the back of the pads and on the caliper pistons.

If its squeaking all the time it sounds like a backing plate or a hardware clip it rubbing the rotor, if its only when you hit the brakes its most likely the pads. Never had good luck with autozone brakes.
